Yamato doesn't watch the exchange, but he's listening intently, and still listening when the bellman bows himself out. If he shuts his eyes, he can even hear the foot traffic outside their room.
He makes sure not to drop character -- not unless Cassian indicates he can -- instead crossing to the window and peering out of it.
